Chocolate Banana Pancakes

This morning we were craving chocolate breakfast, but not too sweet. We decided to make Chocolate Banana Pancakes! You’ll be blown away with this amazing recipe. The soft texture, the sweetness, the chocolate smell, this delicious recipe has it all!

Is there anyone who doesn’t like pancakes? Well, we love them, but we haven’t been making them so often before, mostly because we were making them in the traditional way. We were putting all the ingredients into a bowl, then use a whisk or hand mixer to mi mix everything well. Then we had to use a ladle to pour the mixture in a pan.. But the main problem with this is that we were using a lot of dishes plus the texture of the batter was very lumpy sometimes. 

To avoid the lumpy texture of the pancake batter use a food processor or blender. We can assure you that the batter will be 100% smooth and creamy. And what is the best is that you’ll use only the blender for that (one device/dish), and don’t need to wash so many dishes anymore 🙂

Chocolate American Pancakes

INGREDIENTS

  • 1 small ripe banana
  • 2 flax eggs (2 tablespoons ground flaxseeds + 6 tablespoons water)
  • 3 tablespoons quinoa flour
  • 6-7 tablespoons oat flour
  • 1 teaspoon maple syrup
  • 2 tablespoons raw cacao powder
  • 5.1 fl oz (150 ml) non-dairy milk or water (it’s good no matter what you use)
  • 1/2 teaspoon baking powder

TOPPING Ingredients

  • raspberries
  • blueberries
  • maple syrup (or honey if not vegan)

INSTRUCTIONS

  • For these pancakes, we used oat and quinoa flour. To make oat flour, add rolled oats into a blender od food processor and blend until you reach a flour consistency.
  • How to make a flax egg: Combine 2 tablespoons of ground flaxseeds (flaxseed meal) and 6 tablespoons of water. Stir well. Let it sit for about 5 minutes.
  • Add all ingredients, including a previously made flax egg, into a blender and blend on high until smooth and creamy. You’ll get a thick pancakes batter.
  • Grease the pan and put it over medium heat. Pour the batter into the pan to form small round pancakes. Cook each pancake for about 2 minutes, or until the bubbles start to form, then flip it over and cook for another minute. 
  • Serve and eat the way you like. We put frozen blueberries and raspberries that we had on hand and some maple syrup on top.
