Today is one of those days when I want to stay at home and watch movies, relax, and drink something sweet to warms me up. But also I would like to start my day with a healthy and non-dairy drink, something that smells like Fall! Yes, I want a healthier version of a popular Starbucks Pumpkin Spice Latte. Hmm, how about a Homemade Pumpkin Spice Latte recipe?

This is how I come to idea to recreate this famous drink. To be completely honest I like the Starbucks version but I wanted my own without artificial sugar and dairy.

I must admit this was my first time to make Pumpkin Spice Latte and I’m literally blown away. This amazing drink is so creamy, smells so beautiful, and the taste is unbelievably good.

If you have on hand homemade pumpkin puree, as I did, it’s even better!

Instead of coffee, you can use Chai tea. This is good for people who don’t drink coffee and prefer tee instead. I like both options. 🙂 If you like this recipe or want to see more recipes like this let us know.

This recipe is 100% vegan, dairy-free, gluten-free, and healthy! Also, it serves 2 people, if you want to prepare this only for yourself just divide everything by 2.

Prep time: 5 min   Cook time: 5 min   Total: 10 min   Servings: 2

INGREDIENTS

  • 1/4 cup brewed coffee or double espresso
  • 2 tablespoons pumpkin puree
  • 1 cup (250ml) unsweetened almond milk (or other non-dairy milk of your choice)
  • 1 tablespoon maple syrup or more to taste
  • 1/4 teaspoon pumpkin spice

INSTRUCTIONS

  • Prepare double espresso or brewed coffee.
  • Add almond milk, pumpkin puree, maple syrup, and pumpkin spice in a saucepan over medium heat. Wisk everything together until completely combined. Let it cook for a few minutes (no longer than 4-5 minutes)
  • When done transfer the mixture to a french press or put in the blender. This step is optional – if you want a nice and creamy foam then you don’t want to skip it! If you are using a french press like me, just pump the plunger up and down several times and you are done. In a blender, everything is a bit easier just blend for a couple of seconds and that is it! (optional)
  • Divide an equal amount of coffee into two cups and add pumpkin mixture
  • Sprinkle with a little bit of pumpkin spice or cinnamon (optional)
  • Enjoy your Pumpkin Spice Latte with your friend or loved one!
