Mixed Greens Quinoa Salad with Roasted Tofu

Our Mixed Greens Quinoa Tofu Salad is the best lunch or dinner meal salad.

Who says that eating healthy is not fun? That healthy food can never taste as good as non-healthy alternatives? Hmm totally not true! We put so many goodies into this salad bowl, it reminds us of a spring in a bowl :), so many vibrant colors and the taste is absolutely amazing. 
Mixed Greens Salad
We decided to go with a vegan option with this salad. Our protein choice was roasted tofu. You don’t have to roast it, it’s totally optional, but we encourage you to do so because the taste is amazing. Tofu gets a crispy texture which gives this salad a really nice crunch. Even without tofu, this salad is a must try!

Mixed Greens Dinner Salad
Prep time: 5 min   Cook time: 25-30 min   Total: 30-35 min Servings: 1




 

 

INGREDIENTS

  • 1/3 cup (60g) cooked quinoa
  • 1 cup mixed greens (any greens you like – kale, spinach, etc..)
  • 2 radishes
  • 3 cherry tomatoes
  • 1 small spring onion
  • 2 tablespoons cooked chickpeas

FOR ROASTED TOFU

  • 1/3 extra-firm tofu (about 70g or 2.46 oz)
  • 1 tablespoon olive oil
  • 1/4 teaspoon oregano
  • pinch of salt

DRESSING

  • 1 tablespoon of extra virgin olive oil
  • juice of a half a lemon
  • 1 teaspoon tahini
  • pinch of salt

INSTRUCTIONS

  • Preheat the oven to 360°F (180°C). Line a small baking sheet with a parchment paper. Cut tofu into bite-size pieces, transfer to a baking sheet. Drizzle with some olive oil, oregano, and salt. Toss everything and let it roast for about 20-30 minutes.
  • To make a dressing add all the wet (dressing) ingredients into a small bowl and mix them until combined. Add water if the mixture is too thick. Set aside.
  • Slice radishes and cherry tomatoes into bite-size pieces. Chop spring onions. Add them to a bowl along with cooked quinoa, roasted tofu, and chickpeas. Pour dressing over it. Toss everything together until combined.
