Homemade Mushroom Hummus – Vegan

Hello Everyone! We are so excited to share with you our new hummus recipe – Homemade Mushroom Hummus! 🙂 If you are a mushroom fan, you’ll be enjoying deeply this recipe.

The most important fact about this recipe is that we haven’t used a lot of salt, and we excluded pepper and other similar spices. Our main goal was to make something everyone can eat. Even people who don’t like or cannot eat spicy foods can enjoy while all the good flavors are kept.
Homemade Mushroom Hummus
This delicious hummus has a light texture. It can easily be spread over bread. Children love it because it doesn’t have a strong flavor most kids don’t like. It’s great for snacking too, especially with healthy snacks like carrot or cucumber sticks – our best excuse to eat hummus whole day! 🙂




 

 
Hummus is something we make at least twice a month. Experimenting with flavors is our favorite thing! INGREDIENTS

  • 5.3 oz (150g) common mushrooms
  • 1 cup (200g) cooked chickpeas (canned if you don’t have time to cook them)
  • 1 large spring onion
  • 3 tablespoons of tahini
  • 3+1 tablespoons of extra virgin olive oil
  • 1/3 teaspoon ground of Himalayan salt (or other if you prefer)
  • water

INSTRUCTIONS

  • Preparing Mushrooms: Slice the mushrooms and chop the spring onion. In a large pan heat 1 tablespoon of olive oil and chopped onions over medium size heat. Saute onions for about 1 minute. Add sliced mushrooms. Cover the pan and let it cook for about 8 minutes. When done, let it cool for about 5 minutes. NOTE: We haven’t added any spices at this point. If you want you can add salt and pepper.
  • Into a food processor add cooked chickpeas, cooked mushrooms, tahini, olive oil, and salt and mix for about 1 minute until smooth. Add water if necessary, depending on your desired thickness. We added 2 tablespoons.
  • Transfer the mixture to a prepared jar or another dish. Garnish with some cooked mushrooms and fresh spring onions.
  • Serve and enjoy Homemade Mushroom Hummus!
