No Bake Almond Mini Cups
Winter holidays are our favorite time of the year! We love the festive atmosphere, beautiful decorations, cinnamon smell, hot chocolate, favorite Christmas movies. This year has been very tough for all of us, but that doesn’t mean that we shouldn’t celebrate with our loved ones. Not sure about you, but we are so happy to celebrate the end of this year. In that name we are sharing with you one amazing festive dessert – No Bake Almond Mini Cups – which is perfect healthy little treat for you and your loved ones!
These little cups are made with pure & healthy ingredients, they will satisfy all your sugar cravings in just two bites :)! They have our perfect combination of softness and crunchiness at the same time. The top layer is made of homemade dark chocolate while the bottom layer has soft texture from the honey (maple syrup), almond butter, and almond flour.

INGREDIENTS (for the Almond Base)
- 1 1/2 cup (170 g) almond flour
- 2/3 cup (about 230 g) liquid sweetener like honey, maple syrup, etc. We used honey
- 5 tablespoons almond butter
INGREDIENTS (for the Chocolate Topping)
- 3/4 cup (125 g) semi-sweet dark chocolate
- 1 tablespoon coconut oil
TOPPING (Optional)
- flaked almonds
INSTRUCTIONS
- Almond Base: Add almond butter and liquid sweetener of your choice into a large bowl. Stir to combine ingredients and then add almond flour. Stir well again until the dough start to form. The dough will be soft.
- For this recipe you’ll need 36 paper cups about 1 inch wide (or larger, it’s up to you what size of the cups you want use). Fill about a half of each cup with the almond base dough, leaving the other half for the chocolate topping. Use a small spoon to evenly distribute the dough into each cup. Don’t worry if it doesn’t look perfect, the dough is soft and in a minute or two it will fill the bottom of the cup evenly. When done let the cups cool in the fridge for at least 10 minutes. While the cups are cooling, prepare a chocolate topping.
- Chocolate topping: Prepare a double boiler. We made our own chocolate. The recipe is here, we just haven’t added almonds to it. Add the topping ingredients into a bowl and put the bowl over a pot with boiling water (double boiler) until it’s completely melted. Stir well. Pour the chocolate topping over the almond layer. Toss with flaked almonds (optional). Refrigerate for at least 1 hour. Keep in fridge while not eating.
- Serve and enjoy No Bake Peanut Butter Cups the way you like!
