Overnight Oats with Coconut and Chia Seeds

On our recent trip to Hungary, we discovered one really interesting recipe but with not so many good ingredients! We wanted to make the healthier version of it by adding some superfoods and by removing sugar from it. This is how we created these amazing Overnight Oats with Coconut and Chia seeds.

If you are looking for a make-ahead breakfast recipe, this one is the best choice. All you need is 5 minutes of your time to mix everything and you’ll have a great healthy breakfast the next morning!

Overnight Oats
One of the ingredients that make this recipe so amazing is coconut yogurt! It gives it amazing summery coconut flavor and rich creamy texture. For this recipe we used ground rolled oats but there is no need to ground the oats if you don’t want to. The recipe is 100% vegan, gluten-free, and dairy-free.

Overnight Coconut Chia Oats
Prep time: 2 – 8 h   Cook time: 5 min   Total: 2 – 8 h 5 min   Servings: 1




 

 

INGREDIENTS

  • 1 tablespoon chia seeds 
  • 5 tablespoons ground rolled oats
  • 4 tablespoons coconut yogurt (vegan!)
  • approx 2 fl oz (60 ml) of unsweetened non-dairy milk (we used almond milk)

TOPPING

  • fresh blueberries (optional)
  • fresh redcurrant (optional)

INSTRUCTIONS

  • In a small mason jar (or a small glass) add chia seeds, ground oats, coconut yogurt, and non-dairy milk. Stir together until combined. Tighten lid (or cover with plastic wrap). Place the jar in the fridge for at least 2 hours or overnight (better).
  • Add fresh blueberries and red current on top of the overnight oats.
  • Enjoy your Overnight Oats with Coconut and Chia!

NOTES

  • The texture is thicker and more flavorful if it stays for about 6-8 hours in the fridge – overnight.
