Pumpkin Overnight Oats Recipe

Hello Everyone! Fall is finally here! Not sure about you, but we love all the orange, yellow, and red colors that Fall brings. What we love even more are definitely the pumpkins! That’s what today’s recipe is all about – we are sharing with you our favorite Pumpkin Overnight Oats Recipe.

For this recipe you’ll need a pumpkin puree. We are strongly encourage you to make your own pumpkin puree – link to the recipe is here. It’s healthier, fresh, and tastes amazing!

Overnight Pumpkin Oats
Prep time: 2 – 8 h   Cook time: 5 min   Total: 2 – 8 h 5 min   Servings: 1




 

 

INGREDIENTS

  • 6 tablespoons rolled oats
  • 3 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • 1 teaspoon maple syrup
  • 2/3 tablespoon chopped walnuts
  • approx 4.7 fl oz (140 ml) of unsweetened non-dairy milk (we used almond milk)

TOPPING

  • chopped walnuts

INSTRUCTIONS

  • In a small jar or a bowl combine all the ingredients. Stir well until combined. Tighten lid (or cover with plastic wrap). Place the jar/bowl in the fridge for at least 2 hours or overnight (better).
  • Add chopped walnuts on top of the overnight oats.

NOTES

  • The texture is thicker and more flavorful if the overnight oats stays for about 6-8 hours in the fridge – overnight.
