Vegan Scrambled Eggs

Ever since I started eating more vegan meals, I was searching for an ideal recipe that would stand up for the good old fashioned scramble eggs. Most of the recipes I tried have dry texture and they are not very delicious. But then, Darko and me, last week we created amazing Vegan Cheese Sauce, and I thought let’s make Vegan Scrambled Eggs using that amazing sauce?!

The best decision ever! The texture is soft, they taste delicious, and look like real eggs! With the right combination of spices, good firm tofu, and amazing sauce, we created the best Vegan Scrambled Eggs!
Vegan Scrambled Eggs
What we love about this recipe is that it won’t take more than 5 minutes of your time. It’s 100% vegan, gluten-free, dairy-free, cholesterol-free, and contain less fat then regular eggs. A healthier breakfast recipe, loaded with protein, will keep you full for a couple of hours!




 

Our Vegan Scrambled Eggs keep good in fridge up to 5 days, but make sure to keep leftovers in airtight container. You can freeze these scrambled eggs easily but tofu will get a chewier texture. If you don’t mind that you can try, but we do mind, so freezing is not something we recommend doing.

Tofu Scrambled Eggs
Prep time: 2 min   Cook time: 3 min   Total: 5 min   Servings: 2




 

INGREDIENTS

  • 8.8 oz (250 g) firm tofu – 1 tofu block
  • 1/2 teaspoon turmeric powder
  • pinch of Himalayan salt
  • 1/4 teaspoon ground black pepper
  • 3-4 teaspoons Vegan Cheese Sauce
  • olive oil or nonstick oil spray (to slightly grease the cooking pan)

INSTRUCTIONS

  • Place a non-stick frying pan on the medium heat and add the olive oil. 
  • While the pan in heating, in a small bowl crumble the tofu with your fingers. Stir in turmeric powder, ground pepper, and salt. Stir until everything is evenly combined. 
  • Add tofu mixture to a pan and cook for about 3 minutes, until tofu is heated. Make sure to stir in the process. When done, remove pan from the heat and add Vegan Cheese Sauce. Stir everything well.
  • Serve immediately with some cherry tomatoes on a side (optional). 
  • Enjoy your Vegan Scrambled Eggs!
