Quinoa & Cheese Stuffed Peppers

INGREDIENTS
- 1 bigger red pepper
- 1.8 oz (50g) quinoa
- water for cooking the quinoa
- 1.8 oz (50g) full fat cream cheese
- 1 slice of Emmental cheese
INSTRUCTIONS
- Preheat the oven to 350°F (180°C).
- Rinse the quinoa under cold water. Add it to a small pot and add double the amount of water. Place it over a medium heat and bring to boil. There reduce the heat and cook for about 10-15 min, until no water remaining in the pot. Let it cool for about 15 minutes.
- In a small mixing bowl mix together cream cheese and quinoa until evenly incorporated.
Staff the pepper with the mixture. Add the slice of Emmental cheese on top to close the stuffed pepper. Bake for about 25-30 min. - Serve and enjoy your Quinoa Cheese Stuffed Peppers!
Note
- This is for one serving only! If you want to stuff more peppers you can do it easily by multiplying the ingredients depending on the number of the peppers.
