Vegan Cauliflower Blueberry Smoothie Bowl

Cauliflower in a smoothie bowl? Hmm.. sounds weird? What If I show you a perfect vegan breakfast recipe where the main ingredient is cauliflower? Vegan Cauliflower Blueberry Smoothie Bowl is such a tasty light smoothie bowl recipe and a great option for all of you who simply don’t enjoy eating it! You won’t even notice it’s there.

A couple a days ago my father came to visit me and brought with him my favorite summer fruits: fresh figs and white mulberries. It’s always very difficult to find them at the local stores or supermarkets, especially fresh! This gave me the idea to make a perfect summer smoothie bowl using figs as a natural sweetener. I simply love this smoothie bowl, it has such a nice creamy texture and fresh-fruity taste.

  • 1 cup (about 135g) of frozen uncooked Cauliflower
  • 1/2 cups (about 50g) fresh blueberries
  • 1/2 fresh banana
  • 2 fresh figs
  • 1 tablespoon ground flax seeds
  • 3.5 tablespoons rolled oats
  • about 1.7 fl oz (50 ml) nondairy milk (or regular water) - add more if necessary

TOPPING (Optional)

  • about 6 fresh white mulberries
  • 2 small fresh figs
  • coconut flakes

INSTRUCTIONS

  • Add all smoothie ingredients to a blender. Blend on high until you reach smooth and creamy consistency.
  • Pour everything into a bowl. Add topping ingredients.
  • Enjoy your Cauliflower Blueberry Smoothie Bowl!
