Vegan Cauliflower Blueberry Smoothie Bowl

Vegan Cauliflower Blueberry Smoothie Bowl is such a tasty light smoothie bowl recipe and a great option for all of you who simply don’t enjoy eating it! You won’t even notice it’s there.
A couple a days ago my father came to visit me and brought with him my favorite summer fruits: fresh figs and white mulberries. It’s always very difficult to find them at the local stores or supermarkets, especially fresh! This gave me the idea to make a perfect summer smoothie bowl using figs as a natural sweetener. I simply love this smoothie bowl, it has such a nice creamy texture and fresh-fruity taste.

- 1 cup (about 135g) of frozen uncooked Cauliflower
- 1/2 cups (about 50g) fresh blueberries
- 1/2 fresh banana
- 2 fresh figs
- 1 tablespoon ground flax seeds
- 3.5 tablespoons rolled oats
- about 1.7 fl oz (50 ml) nondairy milk (or regular water) - add more if necessary
TOPPING (Optional)
- about 6 fresh white mulberries
- 2 small fresh figs
- coconut flakes
INSTRUCTIONS
- Add all smoothie ingredients to a blender. Blend on high until you reach smooth and creamy consistency.
- Pour everything into a bowl. Add topping ingredients.
