Almond Oat Cookies with Pecans

Merry Christmas everyone!! We realize this is the second time we’ve done a cookie recipe in a row, but we couldn’t resist. These are crunchy, super delicious, tea cookies made with healthy whole food ingredients. If you liked our previous recipe you’ll love this one as well.

Making vegan cookies may appear to be a mission impossible because most cookies are made with butter or milk, but we assure you that they can be far more delicious then any dairy-based cookies. For us the key ingredient is good almond flour, it’s the base of this recipe. Besides that we prefer using liquid sweetener for making cookies, mostly maple syrup, it’s way healthier, and if you add some nut butter to it there is no need to use butter!

Oat Almond Cookies
Prep time: 10 min   Cook time: 12-14 min   Total: 22-24 min   Servings: 6-8




 

 

INGREDIENTS

  • 1 1/4 cup (140g) almond flour
  • 3/4 cup (80g) oat flour
  • 1 cup (110g) chopped pecans
  • 1/2 teaspoon baking soda
  • 1/3 cup (110g) maple syrup
  • 4 tablespoons peanut butter
  • 1 teaspoon cinnamon
  • 1/4 cup (40g) chocolate chips (optional)

INSTRUCTIONS

  • Preheat the oven to 350°F (170°C). Prepare the baking sheet lined in with baking paper and set aside.
  • In a large bowl, mix together almond flour, oat flour, cinnamon, and baking soda. In a separate bowl combine peanut butter and maple syrup until you reach creamy consistency. Then stir in maple peanut mixture until evenly combined. When dough is formed add pecans and stir again.
  • Roll the dough into balls. Place them on lined baking sheet. Use a back of the spoon or your fingers to gently press each of the balls to flatten them a little bit. Add chocolate chips on top of each cookie (this part is optional).
  • Bake for about 12-14 minutes or until golden brown. Don’t over bake them they can easily get burned. 
  • Let them cool for about 2-3 minutes before moving them into a glass container. These are crispy cookies.
