Vegan Almond Chocolate Cookies with Walnuts

Happy New Year everyone!! Our obsession with cookies continues. 🙂 We used the same base ingredients as in our previous recipe, but we tweaked them a little to make these Vegan Almond Chocolate Cookies with Walnuts even healthier. Our sweetener of choice was ripe bananas with a dash of maple syrup.

You’ll get soft or crisp cookies depending on how long you leave them in the oven. We opted to bake them for only 12 minutes this time. Bake the cookies for 16 minutes if you want them to be crisper but make sure not to burn them!  
Vegan Almond Chocolate Cookies
These delicious vegan cookies are not too sweet. You can omit the maple if you wish, and the results will still be fantastic. Our favorite method to serve them is with hot tea in the morning; it always brightens our day! They are free of gluten, dairy, and sugar!

Almond Chocolate Cookies

INGREDIENTS

  • 2 cups (240g) almond flour
  • 3/4 cup (80g) oat flour
  • 1 cup (110g) chopped walnuts
  • 1/2 teaspoon baking soda
  • 3 tablespoons maple syrup
  • 4 tablespoons raw cacao powder
  • 2 ripe (medium-sized) bananas – mashed
  • 1 teaspoon vanilla paste (or extract)
  • 1/3 cup (60) chocolate chips

INSTRUCTIONS

  • Preheat the oven to 350°F (170°C). Prepare the baking sheet lined in with baking paper and set aside.
  • In a large bowl, mix together almond flour, oat flour, cacao powder, and baking soda. In a separate bowl combine mashed banana, vanilla paste (or extract) and maple syrup. Then stir in maple banana mixture into the bowl with fry ingredients until evenly combined. When dough is formed add walnuts and chocolate chips and stir again.
  • Roll the dough into balls. Place them on lined baking sheet. Use a back of the spoon or your fingers to gently press each of the balls to flatten them a little bit. 
  • Bake for about 12-14 minutes. Don’t over bake them they can easily get burned. 
  • Let them cool for about 2-3 minutes before moving them into a glass container. These are medium soft cookies.
