Vegan Almond Cookies

I tend to avoid making almond cookies at all cost because they got burned several times. Sometimes they would be so hard that it was impossible to eat them. But recently I came across this recipe on some blog and wanted to give it a try, and the result are these delicious Vegan Almond Cookies.

These amazing cookies are made of only 4 basic ingredients: almond flour as a base, baking powder, maple syrup as a sweetener, and vanilla extract for some flavor. The idea was to make plain cookies but if you like to add something extra into them go ahead. Actually we will share with you, very soon, some of our favorite mix-ins. But stay tuned for that! 😉
Almond Cookies
Our Vegan Almond Cookies are absolutely perfect with any type of tea that you like. It’s our favorite way of serving them. We love them more on a softer side (see instructions for tips on how to make them more softer or more crispier). Not only these cookies are vegan, but they are also gluten-free, and sugar-free.

Vegan Cookies
Prep time: 5 min   Cook time: 12-14 min   Total: 17-19 min   Servings: 4




 

 

INGREDIENTS

  • 2 cups (240g) almond flour
  • 1 teaspoon baking powder
  • 1/3 cup (110g) maple syrup
  • 2 teaspoons of vanilla extract

INSTRUCTIONS

  • Preheat the oven to 350°F (170°C). Prepare the baking sheet lined in with baking paper and set aside.
  • In a large bowl, mix together almond flour and baking powder. Then stir in maple syrup, and vanilla extract until evenly combined. 
  • Roll the dough into balls. Place them on lined baking sheet. Use a back of the spoon or your fingers to gently press each of the balls to flatten them a little bit. To make softer cookies, gently flatten them, and to make crispier cookies, make them thinner – depending on what type of texture you like for cookies.
  • Bake for about 12-14 minutes or until golden brown. Don’t over bake them they can easily get burned. 
  • Let them cool completely before moving them coz they will fall apart.
