Spinach Cheese Pie
This pie is so soft and moist, it’s tasty all by itself. But trust me, it hits a whole new level of yumminess when you pair it with some creamy Greek yogurt or cream cheese. The combo of textures and flavors is just heavenly – a real treat for your taste buds! Also, it stays fresh for up to 5 days in the fridge.

Quick and Easy Spinach Cheese Pie
Prep time: 10 min   Cook time: 40 min   Total: 50 min   Servings: 3-4




INGREDIENTS

  • 5.3 oz. (150g) spelt flour
  • 3.5 oz. (100g) rye flour
  • 3 eggs
  • 8.8 oz. (250g) feta cheese
  • 4.4 oz. (125g) fresh baby spinach 
  • 1 tablespoon of baking powder
  • 3.4 fl. oz. (100ml) olive oil
  • 6.8 fl. oz. (200ml) milk

TOPPING

  • 2-3 tablespoons sunflower seeds
  • 2 tablespoons flaxseeds

INSTRUCTIONS

  • Heat your oven to 340°F (170°C). Get ready with a 10-inch round dish for this recipe. If you’re using a glass or non-silicone pan, be sure to grease it lightly with some olive oil.
  • Finely chop the spinach into tiny pieces and cut the feta cheese into small cubes. In a large bowl, blend together the dry ingredients. Add the whisked eggs, olive oil, and milk, stirring until evenly combined. Fold in the spinach and feta cheese until well incorporated.
  • Transfer the mixture into a round pan and generously sprinkle sunflower seeds and flaxseeds on top.
  • Bake for about 40 minutes. Check with a toothpick – if it comes out clean then it’s done.
  • Let the pie cool completely before serving.
