Quick & Easy Spring Lettuce Salad
Lettuce Spring Salad is one of the best quick & easy salads you can prepare when you are in a hurry! It’s a perfect side dish for any meal. All you need to do is to slice all the ingredients, add dressing, and you are done! It’s that easy! Kids will love it too. This is by far my favorite salad since I was a kid.
Lettuce is one of those greens that tastes amazing. You can easily combine it in any salad even eat it on its own without any dressing added. This superfood is an excellent source of fiber and cellulose, its low in calorie and contains almost no fat – great for weight loss.
Try to incorporate as many greens as possible into your daily diet, especially leafy greens – they are super-healthy. This Spring lettuce salad is 100% vegan, gluten-free, and dairy-free.

INGREDIENTS
- 5-6 large lettuce leaves
- 1 medium size scallion
- 2 wild garlic leaves (ramsons)
- 3 medium size radishes
DRESSING
- 1 tablespoon extra virgin olive oil
- about teaspoon water
- 1 teaspoon apple cider vinegar
- pinch of Himalayan salt (optional)
INSTRUCTIONS
- Slice all the dry ingredients (lettuce, scallion, ramsons, and radishes) and add them to a mixing bowl.
- Transfer all the wet ingredients into a small bowl and mix until smooth.
- Pour dressing over salad and toss to combine.
- Enjoy your Spring Lettuce Salad!
